Memorial Day Weekend is here and my family left on a camping trip. We decided Eli is not quite ready for trips like that just yet, maybe next year. However, I haven’t stopped thinking about it. More so because before they left, my nephew couldn’t stop talking about all the good things they were going to eat…s’mores being the highlight of the teasing.
Staying home won’t be too bad though. Our new neighborhood is awesome. We were invited to the annual Memorial Day Street Party and even though we weren’t asked to bring anything, we cannot show up empty handed. Trying to figure out what to make for a large group of people is tough already, but when you add an infant to the picture the planning sometimes feels like a much heavier load.
I started to go through my recipes but all I kept thinking about were sweet, delicious, campfire s’mores. Then it hit me! I have been obsessing over these teeny tiny s’more muffins I bought at least once a week when working in Hermosa Beach. I’ve had the recipe sitting in my “favorites folder” for over two years and have never tried it…well, the wait is OVER!
I took a “test drive” to make sure the recipe worked. I took them out of the oven and put Eli down for the night. Before I could take photos of this magical creation, half of them were gone! They’re AMAZING!
Besides being our new favorite baked good, these muffins took less than 30 minutes to make, perfect for our little busy family!
If you need a quick, last minute Holiday dessert, look no further!
- Betty Crocker Premium Muffin Mix, Cinnamon Streusel (water, vegetable oil & eggs)
- 12 bite size Hershey’s Chocolate Bars
- 48 Mini Marshmallows
- Non-Stick Mini Muffin Pan (You can make 48 muffins with this mix, but I filled them up for fuller muffins and only got 24. If you make the 48 just double the chocolate and marshmallows.)
*Follow box instructions to create the batter.
*Pour batter into muffin tins and press a piece of Hershey’s chocolate in the center of each muffin.
*Sprinkle a bit of the prepared streusel on-top of each muffin and gently press down on them.
*Bake for 12-15 minutes.
*Remove from oven and turn the oven to broil.
*Place one piece of Hershey’s chocolate on each muffin and two mini marshmellows on top of each.
*Roast them under the broiler for about a minute.
*Remove the muffins from oven and gently press down on the marshmallows to flatten and spread.
*Place them on a serving platter and don’t forget to share! ENJOY!
